"Needed, so I needed cold, and it's really difficult to slice warm, kind of rare beef, honest, like so, yes, you can seem positive. It's impossible. It's very difficult. So so my trick is to go ahead and cut it into slicer size chunks, put in the freezer and then slice it when it's about three quarters frozen. Right. And then I make my little a tous point. You have to make kind of like your little portion packs for me. I'm gonna do 150 sandwiches on the dock. I can't. I need first. You have to do it. Okay, So I've got this beautiful me. I've got a season with my roast rubbing my my rubber glove line. It's sliced thin. So now I'm looking at I've got maybe a six or eight inch Baghdad Chunk. I've got about six ounces of rare beef that's been cooked with seasoning so rare rare beef. Okay, that's been cooked with seasoning. And now I got the Jew. How would you make yours? You Why would use beef scraps to be to start roasting those in the pen? Okay, I didn't some onions. I would toss the whole thing. Fresh herbs by belief time. Bill Cohen. I would do a classic started. Then I would do a little bit of red wine. Not too much. Just a little bit of red wine. Deglaze the pan. And then I would use veal stock or beef stock. And then about chicken stock, which would be comfortable with chicken stock because you have to be scrapped. So all you're doing is and you wanna like Ju right open for like a Demi glass. No, no, no, no you're looking for but you want flavor in that, you know. I've had two shoes over like fresh out of the faucet, right? It's kind of like no interest whatsoever would not So if you use to light. Just add some spices to it. I'm some herbs on the registry down slowly. New linens to flavor. I mean what I was in there, reduce it down. But for a traditional French dip sandwich, I would say you need about four ounces of you. So which takes off its a lot. You know that's a lot. So if you don't feel right, so you do have to be careful. That's why I say Chicken stop because In my world. I have to worry about the price point. I can't just take £100 of beef bones. No, no, no. No. Because beef bones heir to $3 a pound and they have to be roasted. It's just it's unaffordable. My sandwich would be $25. So, um, So now I've got that so for me now I'm gonna finish up. I've got my butter toasted bun. I've got my rare beef. I've got my Jew now We have to serve it right? Okay, so I take my rare beef and I have a little strainer and I put the strainer right. I kind of wave it through the hot Jew. So little bit like shabu shabu in Japanese. I was going to say you don't get from an Asian restaurant. Well, shovel shoppers, you'll you dip that meat right in the hot broth. So your broth continues to get better than the last time was of the day is probably the best view of the dead at 6 P.m.. Exactly. And you just take that rare beef and doesn't need to stay here, but I'd like to start it rare. On Then you just kind of dredge it through the hot broth. Pop it on your sandwich ad. You're browned onions. Uh, if you want to gild the lily, fresh horseradish Grated right over top of that, for me would be great. I like a little shallot mustard on my bun. You know, And then you're not changing the whole thing. And now I have a French dip sandwich sandwich. I'm not changing. Ah lot. I'm adding some different flavor profiles because oftentimes I find them on crappy buns Bad beef. And can ju and that's why It's okay. I'm gonna I'm gonna make a little effort. It is, But I'm not drastically changing the concept of the sandwich. I'm just trying to use a little bit better technique. No, it's going very, very, very, very good. Cause it's the good thing is you didn't change the price too much. Yeah, the prices 15 bucks. So yeah, I mean, that's that's good. That's a good price for good sandwich like this. And six ounces of meat is a lot so hard. I'll be doing that friendship if you want to come by. On December, the second From 12 to 7 picks Wednesday. Yeah. 12 to 7 PM I'm looking for you around 6 55. I'm getting that you reduce, Although I'll tell you that my cheese steak pop up, sold out the last people who came last didn't get cheese steaks. I'm just telling you that right now. Okay, mister, I'm going to be last one in for the best view in the hot stove Society show on Cairo Radio 97 3 events. You see your business for what it can be. "Loans without thinking very much decided that they didn't like the collateral that bear stearns was providing them anymore and they decided to pull the plug on their own providing that financing and therefore literally bear stearns ran out of money so it's a combination of the way bear stearns and other wall street firms finance themselves which is still going on and the perverse incentives that wall street rewarded it's bankers and traders with to encourage them to do things that were risky without preceding the risks and that too has not changed so both of the reasons in my judgment that caused the financial crisis ten years ago neither one has changed david wessel there were people inside bear stearns who knew what was up a year before for the firm began to unravel bond traders told bear stearns hedge fund managers to write down the values of two funds the high grade structured credit strategies fund and it's brother fund the enhanced leverage fund and they didn't do it i mean there were there were people who saw the cracks and yet did not take action did that make what eventually happened worse could prudent early action have changed the trajectory of the story well the answer to that has to be yes it's a little bit like there's some tremors and some people say this is going to be an earthquake here we're going to have a soon nami so you should flee and other people many of them quote experts say now this is just kind of a mild tremor don't flee after the fact you know who you should have listened to so yes you can identify people who warned of things but you can always identify people there are people who say that because of all the things that happened because of the crisis we would we should be having hyper inflation now and we don't so it's definitely the case that we weren't vic none of us were vigilant enough i don't think as as bill cohen says we fully understood especially people like me on the outside how complicated now interconnected everything was so it was really a house of cards and even if.

"bill cohen" Discussed on KTLK 1130 AM

"Feel like a bazaar 50 billion dollars here a hundred billion dollars there and i feel like it's losing coherency senator bob corker said susan collins immoderate republican who strongly objected to the revised bill she i didn't even know what we are proceeding to next week and said trump had contributed to the lack of clarity over the next steps i'm unclear having heard the president and read his tweets exactly which bill he wants to pass and whether he's just repealing or repealing and replacing whether he's for the senate bill cohen said that as i i don't often find myself in agreement with susan collins on much but boy did she nail it there right like what are you talking about president trump what needs to pass what specifically are you advocating for it seems as though the only thing he ever been advocating for is the passage of something the passage of something in order to provide the pretext upon which to claim that he's fulfilled his campaign promise to repeal and replace obamacare without any consideration of the substance of that legislation or the actual effect that it has upon our lives doing something as the rally cry for bad ideas trump who had campaigned heavily on a promise to repeal and replace obamacare the signature legislative achievement a foreign democratic president barack obama took a hands off approach to the health care debate last week so there was there was a commentary very brief incisive commentary posted on social media today by a former minnesota legislator and the i noted that the post was not public and so i'm not gonna tell ya the individual's name i i'm have a sense that they wouldn't mind but without verifying batam not going to do so but i do want to share the content of what they they posted because i think it's right on this is a person who i am quite convinced shares our principles and values and as a true believer in the cause of conservatism in the conservative movement who has the actual experience of attempting to govern and therefore is coming at this from a credible perspective this is what they write why is the republican congress so ineffective.
