And I imagined myself as the sort of person who lively, even joyously, ignored the thoughts and feelings of others. They would be on each side of me. And the doctor said that whatever the law was, that it probably had just burst and disposed of itself or something like that. So I was just relieved. That was the second miracle. Third miracle was, this was only about 5 years ago. I went to my son's house to pick up my granddaughter, and I was putting her in her cherry or seat, and I laid my keys on top of the car on the near the top of the car, not the hood at the top. And so I got in the car and drove on, and then my older granddaughter was riding passenger side. So, you know, we live in Arcadia and my son lives in Los Angeles. So it's about 25 miles. "Almost half of America's farmers are planning to retire in the next five years, and it's not clear who will replace them. But a group in Alexandria may have a solution. They're working to introduce veterans to farming. As CBS national correspondent Chip Reid tells US vets and farmers have a lot in common. Jenny has camp spent 15 years as a United States Marine. Now she's a farmer with a focus on flowers. These are what I want. She learned the science and the art of farming here at Arcadia Farm in Alexandria, Virginia, on land once owned by George Washington. It's exhausting. It's hot. It's buggy, and it's the most satisfying and the happiest I've ever been. She began three years ago in Arcadia's part time veteran Farmer Reserve program that gives veterans and opportunity to decide if farming is for them. For her. It was a perfect fit. I think it's an incredible program for veterans transitioning from years of service into the next career, she now farms here full time and dreams of one day having a small farm of her own. Pamela Hess is executive director of Arcadia Farm and helped create the veteran farmer program. The goal is to give veterans an opportunity to earn a living in a new but surprisingly similar. There were these enclaves that remained intact, You know, for, like most of their history, so it's really fascinating. That's amazing. And I love I mean, like When we think of region al Indian cuisine, and we think about the land with the You know what the what the environment gives. You usually think about it in terms of ingredients. If you buy the coast, you'll have fish. Yeah, absolutely have sheep. But I mean, even hearing you talk about how well on the islands there's not a lot of wood because it's not tree friendly. So the techniques have the change because you didn't have You couldn't just burned the fires first for a long time and be baking and simmering, you know, like you want to cook stuff fast, because you have that much fuel that's or other historical fuck. Interesting. There are other historical facts that have also affected sort of the food chain or the food. The type of food, for example, when the Venetians were in creed. And in Corfu. They deforested those islands because they needed the timber for their navy to build their ships. So so it's just really interesting. You know, to connect the dots and think. Oh, Everywhere, all connected and everything is connected. Yeah, Um, you mentioned there are so many amazing vegetable dishes and various Greek traditions that we might not know about. So tell us about some of those dishes and what? You're excited to cook coming into your garden right now. Um, I like to surprise people, especially my Greek friends who are so Carnivorous for the most part. Although that's changing a little bit with more environmental awareness, But I like to surprise people with how stating vegetable cooking can be. It used to be that I'd invite Greek friends for dinner, and there wouldn't be meat And there was sort of almost this murmuring like, you know, we're gonna have to go out afterwards. What you know, there's like there's no meat on the table, but Um, I mean, it really depends on what part of the summer we're in. But, um I love zucchini flowers, so that when they come up, I'll do all sorts of things with that. I have grapevines. So I'll make Delmar this and I'll even put some zucchinis. You know the same stuffing. In the zucchini flowers and put that in the same pan and demolish the stuff. Great leaves, right. So what's What's the stuff in your your dues for the usually rice and a lot of herbs? And sometimes some nuts. Um, sometimes some reasons depends on my mood. A lot of onions. Um, that's the secret to all of those stuffed rice dishes because you want that underlying sweetness. So that's you know something that I would would do you know, at various points of the summer or stuffed zucchini or zucchini on the grill with just a simple lemon. Vinaigrette, maybe lemon and mystical, which is a Greek spice from the armed of heroes. It's a resin. Basically, there are interesting flavor that goes very well with Citrus. And then see if I have big zucchini. I would, you know, almost do like zucchini steaks, Um Or let's see all sorts of one pot vegetable dishes, so braised green beans with tomato and onion and garlic and herbs or okra or eggplant, which I make a million different ways. Um, yeah, just endless. It's endless. Yeah, Well, let me ask you this. It may be hard to think of this because I know you mentioned earlier that it's 100 degrees where you are. It's 100 degrees. It's really hot. Yeah, And, you know, I think we think of Greece as being one of these, You know, Like warm weather, almost all year round type places, But what do you cook at the garden? In the winter. Well, I spent a lot of time at the end of the summer, trying to preserve some of that stuff, so sauces and pickled things and whatever, but in the winter time, a lot of greens. A lot of those same dishes, but with greens so I would make I love the variety of vegetable rice dishes that are particularly popular in the wintertime so almost like a result of but Not necessarily with cheese or with butter. It's not usually with olive oil. Uh, So spinach likes panel, Cory's or heart stories of which is that with the same idea with green, so it's basically just spinach, onion or leek or onion and leek or and scallion. Maybe some shallots or a lot of garlic. Um, cooked for maybe about 45 minutes with rice, So it's very comforting. The same thing with leak or the same thing with cabbage with cabbage. I would do, um, I would add, you know, maybe some spice to that some cinnamon and maybe some Turmeric or that's not really Greek, but I would definitely add cinnamon and allspice and tomato and reasons and you know, make it a little bit more substantial. Or I would do stuffed cabbage or, um Stuff, you know, pickled vine leaves or I mean, for every day my everyday cooking a lot of pulses, lentil soups, You know all sorts of ways. Um, Greek giant beans braised and, you know, baked with all sorts of different seasonings. Um I'll do pies a lot of savory pies to in the winter time with all sorts of greens. And a lot of times these pies you know, they have 20 different things in them. So you have spinach and chard and sorrel and maybe some sweet dandelion and travel and Wild fennel and parsley and dill and mint and, you know, leek and onion and scallion and, you know, just goes on and on the carrot or pumpkin. A lot of things with winter squashes too. I make a su fickle, which is the carrion kind of national dish from Arcadia, which has a winter and of summer version. What is it in the summer time? It's Layers of eight of zucchini, eggplant potato thal, thinly sliced tomato, garlic, oregano, a lot of onion usually just quickly cooked in the oven and thin slices, but then layered And simmered altogether or baked all together into this beautifully rich and herbal casserole. And in the winter time I would do the same thing except where I would replace the zucchini with winter squash. Um, chestnuts in certain dishes, stewed leeks. I mean, and these are all the interesting thing is that in traditional Greek cooking, those remain courses. It's not. They're not side dishes. You know there. That's dinner. You know if I cook a lentil soup that's dinner if I cook a spinach rice dish that's dinner. Yeah. Can you walk us through the technique of how you make one of these spinach or greens? "The coronavirus pandemic has dealt a potentially fatal blow to british retail giant arcadia. And its owner sir. Philip green within the next few hours the group which owns internationally recognized brand. Top shop is expected to file for administration much bankruptcy protection. The process will shield the business from creditors as it tries to get finances in order while parts or all of the company is sold off. Well that means some of the group's stores could close. The bbc's simon jack says many of the brands under arcadia umbrella are household names here in the uk and they're likely to survive in some form. this straight the reason why Ron and Kevin and so many others are working on this is because we're facing two pretty big challenges one we've got a lot of wind and solar hitting grids in many cases during windy or sunny periods there's a ton of extra energy being generated which is usually wasted and company he's like socal gas meanwhile are saying how can we clean up the natural gas were sending to homes and businesses so you've got two things happening at once so he here at Enron they're trying to solve that problem and they're taking that excess renewable electricity they're using to make hydrogen then finding Indus- sources of co two and feeding it all two billion year-old microbes then turned it into methane and then Voila Ron's company has renewable gas that can be fed into an existing pipeline yes and they seem confident this is going to happen I mean it is happening and beard ask Ron how he kind of looks up in the sky with dreamy eyes and he'd say absolutely and then you ask Kevin The science guy and he he agrees the idea here is to start with gases which can dissolve into water quickly and that's straightforward you're not breaking down components and then building them back up which some technologies do this is starts with houses so it is a fast reaction the organisms are self replicating and their naturally occurring so if things were to spill for example if we were to have a problem we've essentially spilled some seawater on the ground and we would make sure it's safe and that's what's Nice about this simplicity its vessel it's operating it'll pressures behind you there are hydrogen storage tanks pressurized to thirteen thousand PSI were operating at two hundred fifty it's easier to operate at lower pressures and it's manageable even you
