This is a beautiful country. It's the surrounding surrounding countries. Right now are actually Some of the new hot travel destinations In the world so that in Kosovo has the same Geography civil climate. Hi Matt has an incredible farmland ingredients and also the heritage that sort of an influence of all of its neighbors that its drawing on so in that way. It's great and it's at that moment we're like no one's going there yet and the chefs are really in that moment where they're trying to establish identity and I've found that any time that that's your mission Some some really great stuff in some really experimental stuff happens so what kind of food are using. So you're seeing stuff that draws on eastern European heritage so. You're a lot of the same reasons everyone's really into Georgia right now. all of those big dumplings and things like that. That's part of Kosovo cuisine. You're seeing a lot of classics levers and local ingredients mixed together. You're seeing that sort of looking inward at. Its historical cuisine off the Ottoman Empire though has a lot of Influence there so you're also seeing some Middle Eastern flavors flavors that are great focus on grilled meats on pickles. School is known the list first of all we. There's no list of restaurants Dan. This is the list of cities not on the list. No but you know what is on the list. Is Mama Sweden which is forty minute. Train ride over a very very picturesque bridge from Denmark into Sweden. So it's forty minutes from Copenhagen your forty minutes from the capital and it is very much. It's getting sort of the trickle effect of Copenhagen because it's The a lot of the people actually working Copenhagen live in The restaurant workers and chef actually lived there because it's less expensive expensive might slightly. I think maybe Mama the Brooklyn Copenhagen but yeah it's And but it also has its own whole feel. It's very like painfully cute and charming. And there's like cute architecture the amazing natural wine everywhere and It's a really good it's great you know Copenhagen's great but like take that train ride Goma with when you put together a list like this like what Steps do you take to avoid being one of those lists that we see all the time which are just like the thirty best places to eat in the world and it just seems like it may not be that much just like they're just like brushstrokes not really saying anything and just being like a list for the sake of being alive. How do you convey the authority? Well the first of all. Oh yeah we turn to locals To tell us I I would love to say that. I've been to all of those cities on this list. I have not so you know going along with eater travels whole ethos. The locals know better so we reached out to people in these regions to tell us. Step one argument while there's actually not that many that are where to eat. There are a lot of where to go and a lot. The reasons to go. But if food is your jam and we actually have in our sort of introduction does package a survey that we site that says that it's been proven now for for modern travelers in the year. Two Thousand Twenty food is now our most prized priority. Like the most important thing that we plan and think about ahead even lodging When we travel so oh so focusing list on travel but also around the idea of food is in itself still fairly unique? Once we pick the cities we reached out to people who live there who yeah no it who are experts in that area and asked them to put together a list of the essential restaurants. You need to hit once. They're so not only. Are we just telling you. Hey the city's great. You should eat there. We didn't tell you exactly where to even give you a map to do so so I think that's pretty good. And then what are you going to do for twenty twenty one. We're going to come up with the best places to eat in the world in two thousand twenty one. I have a feeling I mean. Is this list you saw the long lists. I think we had at some point. It was like one hundred thirteen cities that we were like already already. Pretty enthused about whittling down to nineteen was actually really hard so I think the good news here. The upshot is a Food around the world is generally great right now. I think there's a lot of interested in it. I think tourism is growing as a whole anyway. I think everybody's sort of looking inward to their own cuisines and and doing all sorts of new exciting things with them so it's a really good time to travel and eat right now so if you were to make the best places this is to eat in the Milky Way the earth would be one of the places you would suggest you know. I haven't really checked out even the rest of the solar system. You don't have a lot of locals yet that we can can really count on for expertise but who even knows what that honestly thank you for saving me on. That job was really effort. He didn't have to and you could just let it die now. It might have to stay in this. This is just because of the support of all the cities and places on your list. Which one would you personally want to go to next year if you got like a week vacation by yourself with no kids? ooh I think if no kids week vacation at the tough wife Navy between Georgetown Malaysia. which my the expert there who is very in the know in that review and says that it is hands down the best place to eat and all South East Asia and that kind of food is my thing so I am very into Georgetown? I jet there in a second but also then I'd probably just want to put my up. Goes Fancy so I had to Marseille which is has been sort of like the Like more blue collar Port town of the south of France but sort of the North African influence is there and the fact that again real estate is pretty cheap and the coastal food is good. It has brought up at your peril chefs to open hip restaurants. There this leslie you are.
